Cordon Bleu-Granola Bars

Granola bars are great for athletes and fitness professionals and are the perfect portable snack. In addition to being healthy, it energizes the body for an energizing day.

Ingredients

  • Botanical Apple Almond Cookie Sponge
  • Whole Hazelnuts 10 grams
  • Whole Pecans 10 grams
  • Whole Pistachios 10 grams
  • Golden Flaxseed 10g
  • Dried Pitted Dates 10g
  • Whole Almonds 10g
  • Honey 40g
  • Oatmeal 40g
  • Dried Cranberries 30g
  • Dried Apricots 30g
  • Cocoa Butter 25 grams
  • Olive Oil 5ml
  • Chocolate Fondant
  • 70% Tempered Chocolate 50g
  • Grapeseed Oil for Molds Adequate amount

Instructions

  1. Granola Bars

  2. Lightly oil a stainless steel mold and place on a baking sheet lined with baking paper.

  3. Granola Bars: Chop the hazelnuts, almonds, pecans and pistachios and place in a bowl. Add the oatmeal and flaxseed mix then add the diced cranberries, apricots and dates and mix.

  4. Heat the cocoa butter and pour over the nut, fruit and seed mixture and olive oil and mix well.

  5. In a small saucepan, bring the honey to a boil over high heat. Pour into a bowl and stir to coat the nuts, fruit and flax seeds.

  6. Preheat the oven to 180°C. Spoon about 35 grams of granola into each mold, then use a small curved spatula to press the granola down well. Bake in the oven for 10 minutes, then reduce the temperature to 160°C and continue baking for about 15 minutes until the granola is golden brown.

  7. Remove from the oven and wait a few minutes, then carefully remove from the molds and place on a baking sheet to cool.

  9. Temper the dark chocolate. Coarsely chop the chocolate and heat over a water bath for two thirds of the time until the temperature reaches 45-50°C. Remove from the water bath and add the remaining chopped chocolate. Mix until the added chocolate is melted and cool the whole batch to between 30 and 32°C. Test that the chocolate is well tempered and ready to use.

  10. Dip each granola bar's into the tempered chocolate. Place on a baking sheet and allow the chocolate to crystallize for 30 minutes at room temperature.

  11. Store granola bars in an airtight container at room temperature away from moisture for 2+ weeks.

  12. Granola bars are a mixture of grains (especially oats) and dried fruits that contain natural fats and sugars. When covered with chocolate ganache, this energy bar makes the most of its delicious flavor.
